recipe_salmoncakesI love to eat, and I love to cook. The only problem is, after a long day at work, it’s hard to spend more time cooking in the kitchen. So when my friend Nicole offered up her mother-in-law’s easy (and fast) recipe for salmon cakes, I had to try it.

Ingredients:
2 cans salmon
1 box stuffing
½ cup onion, diced finely
2 tablespoons chopped cilantro
1 egg
cooking spray

Make the box stuffing according to directions. Next, add remaining ingredients and mix together. Spoon mixture into hands and form patties according to whatever size you like. (I made mine about the size of medium crab cakes.) Spray frying pan with cooking spray and heat to medium setting. Cook patties on both sides until lightly browned. Serve over rice or on hamburger buns.

We ate ours with green beans on top of hapa rice (brown and white rice mixed together). I also made a makeshift dynamite sauce to go with it. For the sauce, I combined about a half a cup of mayo with 2 tablespoons of Sriracha, a teaspoon of white vinegar, a dash of sugar and salt and pepper to taste.

This recipe is so easy to make and very affordable. It’s definitely going to be my go-to recipe for an easy, fast and fulfilling meal. Perfect for after work!
