Spiced Applesauce Muffins
Ingredients
1/2 cup butter, softened
1/2 cup granulated sugar
1/4 cup packed brown sugar
1 egg
1 cup unsweetened applesauce
1/2 tsp. vanilla extract
1 1/4 cups all-purpose flour
3/4 cup graham cracker crumbs
1 1/2 tsp. ground cinnamon
1 tsp. baking soda
1/4 tsp. ground allspice
1/2 cup walnuts, chopped
1/2 cup raisins
1. In a large bowl, cream butter and sugars until light and fluffy. Add egg; beat well. Stir in applesauce and vanilla.
2. In a separate bowl combine the flour, cracker crumbs, cinnamon, baking soda and allspice; stir into creamed mixture just until moistened. Fold in walnuts and raisins.
3. Fill greased or paper-lined muffin cups three/fourths full.
Bake in a preheated oven at 350 for 20-25 minutes or until a toothpick comes out clean. Cool for 5 minutes before removing from pan to a wire rack. Serve warm.
Yield: 1 dozen.
"This makes a healthy and tasty treat. (Leave out the nuts and raisins when baking for the Editor of Hawaii Home and Remodeling. Or do as I do and fill two muffin tins with batter, and then add the nuts and raisins to the remaining batter and fill remainder of the muffin cups. Extra work, but he's worth it!!)"
